When Chris and I first began Cake Occasions almost five years ago, we designed a range of wedding cakes.
One of our most enduring and popular designs The Morocco is still ordered regularly.
What we love most about working with people is they can take some of our original designs and customise them for their wedding.
Last weekend Anna combined elements of our Love Birds cake with The Morocco, to create a spectacular effect.
There is nothing better than the fragrence of Gardenias, especially after light rain. But their delicate petals and short shelf life after being picked are not ideal for decorating cakes with their fresh flowers.
Chris handmade sugar gardenias in various sizes to create the cascade on Hollie and Tim’s cake, this tied in beautifully with Hollies’ dress which featured a similar motif on her gown.

I love succulents, they are the only plant that I can keep alive and they are such a bold choice to adorn cakes.

These are just some of the sugar roses for Catherine’s cake. Chris has also created buds and less open flowers to create the floral cascade.
He is such a trouper staying back late every night to work on flowers and the rest of the cakes he is producing this week.
This week I am going to do something a little different from our normal posts, I am going to showcase Chris making a 5 tier wedding cake from start to finish.

All our cakes start life as an idea and then a detailed sketch, this is to give our clients an idea of what to expect.
How cute are the owl toppers ? The Bride’s friend made them and they really brought the colours of the cake together.
Vintage glamour is the current catch cry of many couples we are seeing and with that we have been designing some really beautiful and elegant wedding cakes.
There is a real tread towards the classic, waspy style with lots of white on white, ivory and old fashioned elegance.
Think intricate piping, sugar flowers, monograms and lots of tiers.

Here at Cake Occasions we like to stay ahead of trends rather than “on trend”. With each cake we try to push the boundaries of design, construction and colour, we want each client’s cake to be unique, to be personally designed and constructed for them.
So it was with great pleasure that we identified some emerging trends in cake design in this months Cosmo Bride
When designing a cake think about using colour, different textures, oversized sugar flowers or sugar paste love birds as toppers.
Play around with flavours, try peppermint ganache with dark chocolate mud cake or orange mocha.
You are only limited by your imagination.
When I think of the colour grey in relation to food, it produces images of my step dad over boiling broccoli and brussel sprouts. So what do I make of grey cakes ? I LOVE them and it is only a colour after all, not the mushed up veg to go with it.
Chris created this awesome cake late last year for a photo shoot which unfortunately hit the cutting room floor. We really love using bold colours and interesting design features and the combination of grey, yellow, black and white is a real winner at cake occasions. I also think it is a colour combo to watch, just this morning when I was reading the Wedding Paper Divas Blog they had a post this very colour combination.
Chris and I were recently asked to compile a list of trends emerging in cake design.
This gave me a great chance to sit down and go through all the different sketches and cakes that we have done this year.
What struck me was the amount of cakes we are doing that have birds as toppers or which are included in the design.
Even our gorgeous new baby Jasper is getting in on the act.
